"Sandwiches every which way"

Peanut butter and jelly, ham and cheese, turkey club- everyone knows how to make a basic sandwich but fewer people know very many variations on the theme. These sandwiches are off the beaten track but just as yummy for the tummy.


Fast and fit pita pockets

From the Ketchum Kitchen- www.recipe.com

Ingredients:

2 cups diced cooked turkey
3/4 cups pitted prunes, quartered
1/2 cup sliced celery
1/4 cup sliced green onions
1/2 cup unflavored nonfat yogurt
1 tablespoon sweet-hot mustard
Salt and pepper, to taste
Lettuce leaves
3 pita breads (about 6 inches each) halved to make 6 pockets 

In bowl, combine all ingredients except salt lettuce and pita pockets. Toss to mix thoroughly. Season with salt and pepper. Cover and refrigerate until chilled. Fill pita pockets with turkey mixture and lettuce leaves. Makes 3 cups turkey salad.

 


Baby brie grilled marsala

Ingredients:

9 half inch slices baby brie
1 teaspoon olive oil
1 tablespoon minced garlic
6 thick slices of peasant bread
2 cups sliced shiitake or other specialty mushrooms
2 cups fresh spinach, stems removed
3/4 cups Marsala wine

Saute the garlic in olive oil for one minute over medium heat. Add the mushrooms and stir for 5 minutes. Add the wine and boil for 8 minutes or until reduced to a sauce. Put the spinach on top, cover and steam for one minute. Place 1/4 cup of mixture on bread and top with brie slices and remaining bread. Warm in a toaster oven or broiler on low and heat until the cheese softens. Makes 3 sandwiches.

 


Roast beef and California avocado sandwich

Ingredients:

1/2 cup chopped fresh basil
2 tablespoons prepared horseradish
1/2 cup nonfat plain yogurt
12 ounces sliced deli roast beef
6 large butter lettuce leaves
1 whole avocado, peeled and cut into 12 slices
3 pita breads

In a small bowl. thoroughly mix basil. horseradish and yogurt. Spread one-sixth of the yogurt mixture on 2 ounces of beef slices; wrap in a lettuce leaf. Put beef wrapped in lettuce and 2 slices avocado in a pit bread half. Repeat to make five more sandwiches. Makes 6 servings
